Fresh Three-Bean Vegan Chili
Finger-licking good!
Ingredients:

1 Bag of Red Kidney Beans

1 Bag of Black Beans

1 Bag of Red Lentils

40 Garlic Bulbs
-
1/2 Purple Onion
-
1 Green Pepper
-
1 Yellow Pepper
-
1 Red Pepper
-
32oz Vegetable Broth
-
1 cup of Water
-
3 Tbsp of chili powder
-
3 Tbsp of paprika
-
3 Tbsp of Onion powder
-
Optional items: Canned beans, Vegan Cheese (Daiya), Quinoa
Cooking Preparation:

Place beans in a bowl and let soak for 8–12hrs

In a large pot heat olive oil over medium heat, sauté onions, and fresh garlic for 5-7 minutes, or until translucent.

Add the beans, tomatoes (optional), broth, water, and seasoning, bring to boil, reduce heat, and simmer for 15-20 minutes, stirring occasionally.

Add more water and seasoning if necessary. If using fresh beans chili can take up to 60 minutes.
